The man who reads real food

Oz Garcia is one of New York's most sought-after nutritionists — an author and adviser to celebrities, executives and athletes on how to eat for energy, performance and a longer, better life. He's a student of food itself: where it comes from, how it's made, and what it does to us.

His central distinction is simple and sharp: real food versus anti-nutrients. Much of what fills a modern supermarket, he says, has been modified so thoroughly — processed oils, starches, proteins — that it no longer feeds the body. "Cheese" that comes out of a can and sprays onto a cracker, he notes, is no longer food at all.

He's clear-eyed about why. Food industries with budgets in the billions engineer products to hijack the brain — even a child's — designing flavour and sweetness to trigger craving and keep us coming back, entertaining the palate rather than nourishing the body.

On what "anti-nutrient" means

Oz Garcia"We now know processed food comes in many forms — processed oils, fats, starches, proteins. These are foods modified in such a way that they no longer provide nutrition to your body. We'd call them anti-nutritious, anti-nutrient. If it's not created through the natural order — from the animals we raise, from agriculture we minimally treat — that's where the trouble starts."

On the can of "cheese"

Oz Garcia"There are many cheeses worldwide that are extremely good for you — artisanal, archaic, from great legacies, and the source matters. But go to a supermarket and buy 'cheese, fill in the blank' that comes out of a can and sprays onto a cracker — this is no longer a food. It's adulterated, artificially coloured, full of compounds so it lasts, with a gas so it can be propelled. When you eat it, nothing good comes of it."

On the industry and the brain

Oz Garcia"For the most part there isn't a large interest in parts of the food industry to provide foods that are actually good for you. Companies with budgets in the billions are targeting your brain, my brain, the brain of a child. A six-year-old watching a commercial for a sugared cereal has a two-pound brain being bombarded to buy a product by people who know how to override common sense. They're not selling health — they're entertaining the palate."

On sugar and craving

Oz Garcia"We're driven to sweets because through evolution we ate low-hanging fruit for quick fuel — it's titillating, and it triggers the brain to want more. So adding sugar to something like commercial mayonnaise guarantees you'll come back and eat more. These are products denatured on purpose, designed to trigger a desire, an addiction."

Oz Garcia"There are multiple dietary pathways. One improves metabolic performance — your ability to burn fat efficiently. Another reduces the risk of dying prematurely, from diabetes, cancer or heart disease. So you need a primary way of eating — a base — and from there you modify it, to improve your gut microbiome, how your brain performs, and likely to extend the years of wellbeing you're around to enjoy."
